The Absinthe Sour

1 shot Absinthe 
Juice of 1/2 lemon 
1 teaspoon sugar
1 egg white
Soda Water

Shake with ice and strain into a highball glass and fill with seltzer.

This recipe was taught to us by George Rowley of La Fee Absinthe. You can find it in most pre-ban cocktail books.

Toulouse Lautrec used to drink Earthquakes which are an equal mix of Absinthe and Cognac. In fact the oldest cocktail on record is the Sazerac which is made with absinthe and Rye Whiskey or Brandy. These recipes and more are available in our recipe section, check them out.
